TYPICAL APULIAN DISHES

Apulia is an Italian region renowned for its rich and varied cuisine, reflecting its agricultural tradition and abundance of fresh ingredients. Among typical Apulian dishes, orecchiette with turnip tops are perhaps the most iconic. This simple yet delicious dish combines handmade pasta with turnip greens, a vegetable with a slightly bitter flavor.
Pork bowlers are another unmissable specialty: small pork rolls, often filled with cheese and spices, which can be served plain or breaded, offering a burst of flavor with every bite.
Burrata, a fresh and creamy cheese, is a symbol of Apulian dairy excellence, perfect enjoyed alone or paired with fresh tomatoes and crunchy bread.
Capocollo di Martina Franca is a prized cured meat with an intense aroma and spicy flavor, cured using traditional methods.
Finally, Apulian panzerotti are stuffed dough crescents, usually fried, that can contain various ingredients such as mozzarella and tomato, offering an irresistible culinary experience. Along the way, you can stop at the Bhole Baba Center in Cisternino, which organizes spiritual retreats and yoga seminars. Every day, the rites are performed at dawn and dusk with a fire ceremony, open to all.
